Tuna/Sausage Kimbap




These small little Kimbaps were prepared by my sis who loves almost all Korean food. For me, I don't even know how to pronounce some Korean food properly. This morning she made it again for her study group. In order not to waste her effort, I recorded down and now I m publishing it in my blog to share with my fellow bloggers. ;-)




Ingredients

  • 5 cups of cooked rice
  • Roasted seaweed
  • Yellow radish pickle , 1 big cucumber (cut them into strips)
  • A can of tuna (we use tuna in oil)
  • Cooked sausage, cooked crab meat (cut them into strips)
  • mixing sauce (made with 1Tbs of sesame oil,1 tsp of sugar, 1/2 tsp of salt, 1 tsp of lime juice)

Preparation before rolling

  1. Drain the oil from tuna and put it on a heated pan and cook for about 2 minutes.
  2. Prepare the cooked rice in a large bowl and mix with mixing sauce .Stir it evenly. Set it aside.

Rolling of kimbap

  1. Place a sheet of seaweed on the bamboo mat and spread a layer of rice (evenly) .
  2. Place 2 tsp of tuna flakes, a strip of yellow radish, cucumber, sausage and crab meat on top.
  3. Roll it up gently using the bamboo mat.
  4. Remove the bamboo mat and cut the roll into 1-2 cm thick (before cutting rub with a little bit of sesame oil by using hand)

Ready to serve. Enjoy!

Curry Prawn























Today is the last day of the week as tomorrow is a public holiday in Singapore. It will be along weekend for me and I can have more time to spend in my little kitchen. On the way home, I was thinking what should I cook for dinner..Yeah, sometimes it is quite hard for me to choose what to cook as most of them are repeating every week. But somehow, ended up with choosing the old recipe , curry prawn, again.

Cooking style is a little bit different for this time compare to normal curry prawn that I cooked before. As I don't want to have a late dinner, I made this dish really fast.



Ingredients
  • prawns ( about 400 grams)
  • One big onion
  • One tomato
  • 1 1/2 tsp of fish sauce
  • 1/2 tsp of chili powder
  • 2 Tbs of cooking oil




Method
  1. Dice tomato & onion into small pieces.Set it aside.
  2. Remove the shell and clean the prawn. Marinate it with fish sauce and chili powder for 5 mins
  3. In a wok, heat the cooking oil.
  4. Add in number (1) and fry for about 2-3 mins. Give it a quick stir.
  5. Add in the marinated prawn and fry for about 1-2 mins only ( I don't like to fry the prawn too long as it will get harder . 1-2 mins is more than enough for me)
  6. Remove it from the heat and serve.

Total time taken is not more than 20 mins and it is really easy and fast to cook. Enjoy!

Sponge Cake

Finally, I can manage to bake a sponge cake after failing (badly)2 times. :-) . Yayy. Baking a sponge cake is relatively easy , I thought, but realize I was absolutely wrong after failing twice. I was so disappointed with the result. It was due to my poor handling skill especially whipping the eggs and folding in method of the flour. I followed sponge cake method by HHB, however it didn't turn out well. The base of the cake was so hard as a slab of a rubber and I never experience this before. Was it due to over whipping of the eggs or deflation of the batter while folding in flour or both? I simply have no idea.


But I noticed my whipped eggs are different from HHB's and having a lot of air bubbles. The texture was quite different . Then, I looked for sponge cake recipes on YouTube and some video showed they whip egg yolks and egg whites separately. I decided to follow the method and try my luck again. It works!!! This time, the cake looks fine although it is slightly dense. I need to be more gentle next time while folding in flour and should add 1 tsp of baking powder as well.



Ingredients (Cake recipe is adapted from HHB's birthday cake)

- 3 Egg whites , 3 Egg yolks(at room temperature)
- 20gms of melted butter
- 80 gms of sugar
- 100 gms of cake flour (sifted)
- 2 Tbs of milk
- 1tsp of vanilla extract

Method:

  1. In a mixer,whisk egg yolks until smooth and creamy. After 1 minute, add 2 Tbs of sugar and vanilla extract and continue to mix until thick mixture is formed. Transfer the mixture into a bowl and set aside.
  2. Whisk egg whites until white and frothy. Add remaining sugar and continue to mix until stiff.
  3. Fold in number (1)into egg white mixture gently.
  4. Add the cake flour (I separated it into 2 batches to add) followed by melted butter and milk into the batter .Mix well after each addition. Pls take care not to deflate the mixture.
  5. Pour the batter into 18cm baking pan (round) and bake in 180 degree C preheated oven for 30 mins.
  6. Remove from oven and leave it to cool.
  7. Slice the cake and serve.
I will try to make a layer cake next time.

Baking Semolina Cake

I bought a packet of semolina last month as one of the recipes, fried calamari, called for it. Then I used a table spoon or two only. The left over (almost the whole packet) was just sited in my kitchen cabinet for almost a month.


Last a few days ago, I was flipping through my Burmese-English dictionary and happened to know that semolina is called Shwe Kyi (in Burmese), which I already known since young. I don't know how semolina looks like in raw, as I saw before was only in finished product, cake only.


In Burma, we use Shwe Kyi (Semolina) to make cake and it is served as dessert. Since I have the whole packet of semolina, I am going to make use of it. Yes I am going to bake semolina cake (Burmese style) with the help of my little Burmese cookbook.







Here is the recipe

  1. semolina -2 cups
  2. butter - 120grams
  3. fine sugar - 2 cups
  4. coconut milk (not cream)- 5 cups
  5. dry raisin- 1/2 cup
  6. poppy seed -2 Tbs
  • In a frying pan, heat the semolina till lightly brown color

  • Mix heated semolina and sugar in a bowl. Set aside.
  • Heat the frying pan, melt the butter. Add semolina sugar mixture. Stir it well.
  • Add in 5 cups of coconut milk and 1/2 cup of raisin. Stir continuously until a very thick batter is formed.
  • Heat the oven to 180 degree C. Grease 8"x8" square pan and place the batter.
  • Sprinkle poppy seed over the surface and bake for about 30-40 mins.
  • Let it cool completely in the pan and keep it in refrigerator to set - at least for 2 hours.

Cut it according to your preference size and serve. It is very good to go with a cup of coffee or hot green tea.Enjoy!

Steamed Bean Parata


Most of the Burmese foods are influenced by Chinese,Indian and Thai food. We occasionally like to eat Parata, Samosa during breakfast as well as tea time. Last night, I decided to make a " Steamed Bean Prarata" as supper for my sister. The name strange? :D Yeah, this type of Parata is quite famous in Burma and we usually eat it for breakfast. The mesh steamed bean (with salt+ little bit of oil) is filled inside the parata and fry it until crispy and golden brown. It is really delicious. I used ready-made frozen parata which I bought from supermarket. For this recipe, I used steamed garden pea (Burmese name- pae pyote). I couldn't find this kind of bean in SG's supermarket so far and I can only manage find it in Burmese shops.

Here is the method

- Mesh 2 Tbs of steamed bean with a pinch of salt and add a little bit of oil while meshing. Set aside
- Heat the frying pan and put 1 Tbs of oil
- Place a piece of parata and fry until lightly brown (It is ready to fill in those meshed bean when the bottom side is started to crispy)
- Remove top layer of parata gently and fill in the meshed bean. Cover it back
- Flip it to the other side and fry until golden brown.
It is now ready to serve.

ပလာတာကိုေၾကာ္ ေနတံုးက်က္ခါနီးမွာ ပလာတာထဲကိုပဲထည္႔ (ပဲက ဆီနဲ႔ ဆားနဲ႔ နယ္ၿပီး ေခ်ထားၿပီးသား) ဆီနည္းနည္းထပ္ထည္႔ၿပီး က်က္ေအာင္ေၾကာ္ရင္ ရပါၿပီ။ အၿဖစ္ပဲပလာတာ ေပါ႔၊ ဗမာၿပည္ကလုိသိပ္အေကာင္းၾကီးမဟုတ္ရင္ေတာင္ အလြမ္းေၿပ ေပါ႔ေနာ္။

Oatmeal Healthy Biscuits/Cookies
Last week, I was thinking of baking a healthy one as my previous attempts contained lots of butter and sugar. Another reason is my BMI trend. It is climbing up and approaching towards the unhealthy range gradually :-(. As I love baking, it is not possible for me not to bake. So I have to look for healthier recipes ( so called " healthier" ) and I found this recipe ( sorry, I cant recall the recipe source). It is just nice that I still have some leftover oatmeal (my sis bought it quite sometimes ago and she didn't want to eat it anymore after very first time eating it), expiry date is still far though.

Ingredients (1)
- 1 Egg (Beaten)
- 100ml Oil
-1 Tbs vanilla essence
-1/4 Cup of Sugar
-1/8 Cup + 1Tbs of Honey

Ingredients (2 - dry ingredients)
- 1 1/4 cup of flour
- 1/2 cup of Oatmeal
- 1 Cup of mix fruit (dry)

In fact, this is a very simple recipe and it will take you less than 15 mins to prepare. Here is the method. Mix ingredients (1) in a bowl. Put all the dry ingredient into ingredients (1) and mix it well using spatula. Pour the paste into baking pan and bake about 20 mins in 180 degree C preheated oven.

My cookies turn out to be better condition than I expected. Let it cool completely in the pan and cut it into bite sizes. Cookies are now ready. Enjoy!
