Butter Fruit Cake

Here is another perfect tea time cake. It is just a normal butter cake with fruits filling. I notice this type of cake is very popular among food blogger and most of them made this cake recently (including me, :D :D).

For the cake batter, I adjusted from my previous pineapple upside-down cake. Here is the detail recipe.

Cake Batter
  • 200 grams all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 110 grams unsalted butter, at room temperature
  • 180 grams Castor white sugar
  • 1 teaspoon pure vanilla extract
  • 3 eggs
  • 50 ml milk
  • 1 Banana and a small canned of peach (drained and chopped into chunks)

Method

Cake Batter:

  1. Sift together the flour, baking powder, and salt. Set aside
  2. Cream the butter with the sugar until light and fluffy.Scrape down the sides of the bowl and then beat in the vanilla extract.
  3. Crack in the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl.
  4. Fold in the flour mixture (in three additions), alternately with the milk (in two additions), ending with the dry ingredients.
  5. Pour 2/3 of the batter into the cake pan.
  6. Add in banana and peach chunks.
  7. Add in the balance batter (like a huge drops). This idea is from one of food blogger. However, I cant recall/ find the site I've visited again and thus,not be able to give credit to her.
  8. Bake in 160 degree C preheated oven for 1 hour and 10 mins. Remove from oven and place on a wire rack to cool for about 10 minutes .
  9. it's ready to serve. Enjoy

SiewMai- Second time




ၾကက္သားေပါင္း ၊ ေအာင္ၿမင္သြားပါၿပီ။ ပထမတစ္ခါ လုပ္တာကို သိပ္မၾကိဳက္လုိ႔ မေက်ပြဲ ထပ္ႏႊဲထားတဲ႔ ၾကက္သားေပါင္းပါ။ ဒီတစ္ခါေတာ႔ ပစၥည္းအစံု အလင္နဲ႔ လုပ္လုိက္ရလို႔လားေတာ႔မသိ လုိခ်င္တဲ႔ အေနအထားကို ရသြားပါတယ္။ အသားေပါင္းေလးေတြက မမာဘဲနဲ႔ ေပ်ာ႔ေပ်ာ႔ေလး စားလုိ႔ အေတာ္ေကာင္းပါတယ္။ လုပ္နည္းေပးတဲ႔ ၀တ္ရည္ကို ေက်းဇူးအထူး။

Banana Chiffon

It has been for a while that I didnt bake any cake since our last gathering. I was busy with other stuffs and didnt really have mood to bake, at all. This morning, I really felt like baking chiffon cake and I baked this Banana Chiffon for our breakfast since all the ingredients are available in my pantry :-). Recipe was adjusted from my previous banana chiffon cup cake. The texture was just right and satisfactory.


Group (A)
  • 100g of plain flour
  • 5g of baking powder
  • 0.5g of salt

Group (B)
  • 4nos of Egg yolks
  • 40g of sugar
  • 68g of water
  • 50g of Veggie oil
  • 1 large banana (Mesh)

Group (C)
  • 5 nos of egg whites
  • 90g of sugar
  • 1 g of cream of tartar

Method,

  1. Sift group (A). Set it aside.
  2. Using a hand whisk, blend all the ingredients except meshed banana. Sift group (A) into group (B) mixture. Finally add in meshed banana.
  3. Using an electric mixer, whisk group (C) until soft peak form.
  4. Fold in 1/2 of the group (C) into flour- liquid mixture till combine. Gently fold in the balance till combine.
  5. Place in chiffon tin and bake in 150 degree preheated oven for 50mins.
  6. Leave it to cool on wire rack and ready to serve.

Terrarium


အလွစိုက္ အပင္ေလးေတြကို ပုလင္းထဲထည္႔ထားတာပါ။ Terrarium လို႔လဲ ေခၚၾကပါတယ္။ အိမ္အလွဆင္နည္းတစ္မ်ိဳးေပါ႔။ စိတ္ထဲမွာ Terrarium လုပ္ခ်င္ေနတာၾကာပါၿပီ။ ပစၥည္းေလးေတြ မၿပည္႔စံုေသးတာနဲ႔ ခုမွဘဲလုပ္ၿဖစ္ပါေတာ႔တယ္။

အပင္ေလးေတြစိုက္ရတာ စိတ္ခ်မ္းသာပါတယ္။ တေန႔တေန႔ အပင္ေလးေတြကို ၾကည္႔ၿပီး စိတ္ၾကည္ႏူးမွဳကို ၾကံဖန္ရွာယူရပါတယ္။ စိတ္လဲခ်မ္းသာ အိမ္လဲ အလွဆင္ၿပီးသားၿဖစ္တာေပါ႔ေနာ္။ အိမ္မွာက Fittonia အနီေရာင္ပဲရွိတာမို႔ အၿဖဴတစ္ပင္ကို ဒီေန႔မွထပ္၀ယ္လာတာပါ။

လုပ္နည္းကလည္းလြယ္လြယ္ေလးပါ။ ပထမဆံုး ပုလင္း အလြတ္တစ္ခုထဲကို ေက်ာက္စရစ္ခဲေလးေတြ ထည္႔။ ၿပီးရင္ေၿမၾကီးထည္႔ ၊ေရနည္းနည္းေလာင္းထည္႔။ (အညႊန္းထဲမွာေတာ႔ မီးေသြးခဲ နဲနဲ ထည္႔ ရတယ္လုိ႔ ဆုိပါတယ္၊ မထည္႔လည္းၿဖစ္တယ္ optional ဆိုတာနဲ႔ ခ်န္ထားခဲ႔တယ္) ။ ၿပီးရင္ အပင္ ေသးေသးေလးေတြ ကိုစိုက္။ ေနာက္ဆံုးမွာ ေက်ာက္ခဲေလးေတြထည္႔လုိက္ရင္ အလွဆင္ၿပီးသားၿဖစ္သြားပါၿပီ။ အရုပ္ေသးေသးေလးေတြ ထည္႔ရင္လဲ လွပါတယ္။ ရံုးမွာဘဲထားထား၊ အိမ္မွာပဲ ထားထား၊ ဒါမွမဟုတ္ သူငယ္ခ်င္းေတြကို လက္ေဆာင္ေပးရင္လဲ လွတဲ႔ Terrarium ေလးပါေနာ္။

ၾကက္သားေပါင္း (သို႔) Chicken Shumai


ၾကက္သားေပါင္း။ ၀တ္ရည္ ရဲ႔ နည္းေလးပါ။ Orignal recipe က ဒီမွာပါ ။ ဒီ Siew Mai ကိုစားခ်င္ေနတာၾကာပါၿပီ။ မေန႔ကမွ လုပ္စားၿဖစ္သြားတာပါ။ လုပ္စားတဲ႔ အခ်ိန္ကိုလည္း ၾကည္႔ၾကပါဦး။ ည ၈:၃၀ မွစလုပ္တာပါ။ ၉ နာရီေက်ာ္ေက်ာ္မွာ ၿပီးသြားပါတယ္။ မရွိရွိတာနဲ႔ လုပ္မယ္ ဆိုၿပီးလုပ္လုိက္တာ ပုဇြန္လည္းမပါပါဘူး။ ေကာ္မွဳန္႔လည္း ထည္႔ဖို႔ေမ႔သြားပါတယ္။ ၾကက္သြန္မိတ္ကလည္း မရွိ၊ ၾကည္႔လုိက္ေတာ႔ က်ဳဆိုင္ ရွိေနတာနဲ႔ အစားထိုးလုိက္ပါတယ္။

Fruit Salad


Fruit salad, anyone?? This is one of my favorite desserts which contain cheese, cream and condense milk. Sounds so sinful, right? Yeah, it is and thus I seldom make it unless for special occasion. However it is way too delicious, yummy sweetness + cheesy flavor , just a perfect taste.

Ingredients,

  1. A canned of fruit cocktail
  2. 1/2 canned of Nestle cream (for fruit)
  3. 1 teaspoon of condense milk
  4. Cheddar cheese (cut into small strips)

Very simple, in fact the simplest method to make. First, drain the syrup from fruit cocktail. And mix with all the rest of ingredients. Chill it for hour and it's ready to serve. Enjoy!

Choco Fudge Brownies

ဒါကေတာ႔ ၿပီးခဲ႔တဲ႔ တနဂ္ေႏြရဲ႔ ေနာက္ဆက္တြဲေလးေတြပါ။ အခ်ိဳပြဲေတြထဲကတစ္ခုေပါ႔။ အဲဒီေန႔က Brownies, Fruit Salad နဲ႔ ေက်ာက္ေက်ာလုပ္ပါတယ္။ ေက်ာက္ေက်ာကေတာ႔ ဟိုေန႔ကတင္လုိက္ေသးတယ္။ ဒီBrownies ကေတာ႔ သူငယ္ခ်င္း ဘုိဘုိ ရဲ႔ အၾကိဳက္ေပါ႔။ ဒါေပမယ္႔ သူ႔ခမ်ာအဲဒီေန႔က မစားလုိက္ရပါဘူး။ ရံုး ပိတ္ရက္ ဟင္းခ်က္ေနရလုိ႔ ဘယ္မွေတာင္ မသြားႏိုင္ရွာပါတဲ႔။ သူ႔႔ကို FB မွာ Tag ၿပီးႏွိပ္စက္လုိက္ဦးမွ။ ဘိုဘို တစ္ေယာက္ ရွဳံမဲ႔ ၿပီးလာေအာ္မွာ ၿမင္ေယာင္ပါရဲ႔။ :D :D

Two Layer Coconut Jelly

We just had our gathering (with my hubby closed friends) and I prepared some sweet desserts for them. Coconut Jelly is one of them. Pretty easy to made, however my arms were really tried as continuous stirring (for about 1hr++) is required to make it. I've added some green coloring in order to make it more presentable as I find pure clear/ white color is too pale and not so attractive.

The thicker layer is the coconut layer. I didn't pour one layer after another to get this effect and coconut milk was added while boiling for jelly. It became 2 layers by itself after cool down which I believe it is due to the weight difference between Coconut layer vs Jelly layer.

Here the recipe,
  • 1 packet of Pagoda Jelly stick
  • 1.6L of water
  • 280g of sugar
  • 1.5 tsp of salt
  • 400ml coconut mill
Method
  1. Bring the water to boil in a pot.
  2. Add in jelly stick, sugar and salt. Let the jelly be dissolved in the water.
  3. Add in coconut mill and a few drops of green coloring.
  4. Boil until a very (very) thin layer of jelly start to stick to the wooden spoon.
  5. Pour it into cup/mould with desire pattern. Leave it to cool and ready to serve.

Banana Chiffon Cup Cakes



Banana chiffon cup cakes are perfect snack for your tea time :-). Instead of banana- pineapple cake in my "to bake" list, I used only banana to make these little cakes. It is very delicious and having a perfect chiffon texture, light and soft. So simple to make and yet yummy! I just love it. Here the recipe.


Ingredients (Yield ~15 cup cakes)

Group (A)
  • 100g of plain flour

  • 0.5g of salt
