Butter Fruit Cake

Here is another perfect tea time cake. It is just a normal butter cake with fruits filling. I notice this type of cake is very popular among food blogger and most of them made this cake recently (including me, :D :D).

For the cake batter, I adjusted from my previous pineapple upside-down cake. Here is the detail recipe.

Cake Batter
  • 200 grams all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 110 grams unsalted butter, at room temperature
  • 180 grams Castor white sugar
  • 1 teaspoon pure vanilla extract
  • 3 eggs
  • 50 ml milk
  • 1 Banana and a small canned of peach (drained and chopped into chunks)

Method

Cake Batter:

  1. Sift together the flour, baking powder, and salt. Set aside
  2. Cream the butter with the sugar until light and fluffy.Scrape down the sides of the bowl and then beat in the vanilla extract.
  3. Crack in the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl.
  4. Fold in the flour mixture (in three additions), alternately with the milk (in two additions), ending with the dry ingredients.
  5. Pour 2/3 of the batter into the cake pan.
  6. Add in banana and peach chunks.
  7. Add in the balance batter (like a huge drops). This idea is from one of food blogger. However, I cant recall/ find the site I've visited again and thus,not be able to give credit to her.
  8. Bake in 160 degree C preheated oven for 1 hour and 10 mins. Remove from oven and place on a wire rack to cool for about 10 minutes .
  9. it's ready to serve. Enjoy
